This is a very difficult question as there are so many different species of stuff to kill and many will onver lap into a different category.

Was not going to get in on this but cannot resist any longer, so here we go:

7x57 (could not really decide between it and 6.5x55, 8x57 and .30-06, but let's say the 7 gets the nod)

The 375 WBy thread got me thinking of my favorite hunting cartridges off all time.

Here are mine:

22 LR
9.3x62 (followed close my a 375 wby--less bark with the 9.3)
450/400 3" (really it was the gun it was in--but was a sweet shooting as they come)

Big game ideal 3...

270 Win- 130gr Barnes TSX
375 H&H- 270gr Barnes TSX
500 N.E- 570gr Barnes banded solid

Last 3 on earth..

22lr- semi auto
375 H&H- this time with a 300gr flat nosed solid
12ga - 3in chamber
 
.450 nitro. My first classic big game cartridge.. (has a .458 win mag before it which leads to...)

.458 win mag - my first big bore.

.22 hornet. Shot more with this cartridge than any other.

I think with those five long arms I could realistically hunt anything and not feel overly handicapped.

Sometimes the choices are common, pedestrian and boring because they are very good at what they do.

Not including rimfires, this is my stab at all time personal favorites:

338 Winchester

The 223 and 30-06 would probably be constants. They are not flashy in today's hyper velocity cartridges, but suit me fine.
I have several cartridges that are favorites and 3 does not scratch the surface.

Also other real favorites for me are:
7mm-08
7mm Remington
7mm WSM
308 Winchester/ 7.62 x 51
300 Winchester
300 WSM
8x57
325 WSM
375 Ruger
375 H&H
416 Ruger
416 Remington
Of these, at the moment, the 7 WSM, 325 WSM, 375 Ruger, and 416 Ruger would be favorites.
An 8x57 in stainless/ synthetic is at top of the want list.

I've never spoken to anyone else who has an 8x60JRS. That really is cool, I have one too!

Calibres for me are .22lr, .22-250 and 6.5x55. In the UK those will cleanly deal with everything we have outside of the zoo. Everything else I have is because I enjoy learning about different rounds. my 8x60 is a drilling. I barely use it but sometimes I go out and don't know if I will need to shoot a squirrel or a deer, or maybe both. It's perfect for that.
 
TOUGH choice, but for local African hunting, I love:
30-06
300 Win Mag
375 H&H Mag
Including elephant, then 458 Win Mag

416 rigby

All three are classic legacy calibers in my opinion and with them there is one for every game animal available.
 
The 375H&H is my heavy gun, the 7x57 Mauser is my all around rifle and a 22lr has to be in everyone's closet. The 22lr was my first rifle received at age nine; I've put more rounds through 22lr's than all the other rifles combined.

a hot springs (do you have good spots ?)
Looking to buy a 375 H&H or .416 Rem Mag if anyone has anything they want to let go of
