Totally agree. As I have noted here several times, one of my best days in Africa was the afternoon I rolled two warthog for leopard bait and created a respectable mound of sand grouse (they in a frenzied twenty minutes) from the same Namibian waterhole with my Evans Paradox. We had them grilled a couple of different ways and they were superb.
Impala liver is milder than some big game backstrap. It's exquisite as it is tender and mild. My kids were eating it at ten years old when they would not eat venision/chicken/duck liver due to the metallic taste. I want to try and stayed focused on my question about the camp. I am in SA so for sure I can not make it like zim or moz as far as all the big 5 wildlife they have. I want to give the client who can only afford SA the best hunt I can for them. Some seem to get off topic rather easily.
A tented camp in SA will still more then likely be a step above your typical united states tented hunting camp. I am trying to figure out that part of what is to much or not enough for the camp.
I agree fully. In Namibia our PH took me out on the conservatory for an hr to get "southern fried chicken" for supper. He started a bet, we were after guinea fowl, first one to get their 5 won. I was chasing the flocks to get them to fly to shoot, he laughed and shot them on ground. Who does that with a 12 gauge? I managed 6 to his 4, but I did run hard and fast as soon as truck stopped to get them all in the air. Seamed I had more practice at birds on the wing, but we laughed so hard it hurt and had a blast.
OMG did they taste great. So yes eat wild.

Africa is a underutilized wing-shooting paradise. It's a shame there isn't a push to have an AH sponsor put together a fun group shoot, 6-8 guns, five days, lots of socializing.
I also do not do organs. The last thing I want to see is some dish perfected by the PH's Boer grandfather utilizing wildebeest entrails and the like. And liver reminds me more of a sewage filter than anything I care to eat.
A decade ago Shooting Sportsman magazine was organizing annual Africa Wing Shooting Train trips. Where in the States can I go get a guided hunt for elk under $1,200?I wouldn’t argue with that. But not being able to bring meat back does hurt. Where do I go to find a African hunt under $1200? Is it inside a tall fence over a feed trough?

To be honest, if one can not afford many of the RSA deals here that are less expensive than a guided Elk hunt etc. then one needs to improve their financial situation. That is like going to a Ford dealership and asking for a brand new F150 Limited for $20K then whining about it when told the market price.
We did that exact same trick other times when we walked and had trackers with us, all because we asked for more southern fried chicken. We also got one when driving the blacktop at 80 KM. Big flock on road ahead, PH drove right into them, my poor sister sitting beside me on the back safari seat took one to the chest, like a pitcher she grabbed it and handed to tracker who twisted its neck. I think staff eat that one later.You don’t need to chase guineas to shoot them in the air. When you see a flock, send two trackers on a hook root around them to push them back over you. Once they get the hang of it, they can’t get enough. I’ve had some great Guinea shoots in Botswana and Zimbabwe with this technique.
