Picked up my first Pronghorn today

Great looking mounts, they are a pretty animal. What is the eating like?
I had heard they were nearly inedible. Both of our bucks ate great. I tried cooking mine several ways and it was all good but the best was medium rare, right off the grill.

I found the meat from mine was a blend of venison and goat of course. The meat has a very rich flavour to it, unlike venison chops where you could eat a whole stack of them the pronghorn i find is better in moderation
 
Very nice! And I agree that they are a very fun hunt. Mine will hopefully be done soon. It was supposed to be done quite a while ago, but the taxidermist has had some delays.
As far as eating, I think they are fine table fare! As with all other game, the taste can vary due to many factors, from before you pull the trigger right up to when it's on your plate!

congrats on a great looking goat and some really nice taxidermy. Jeff and I have looked at several
antelope hunts but not found the right one yet. If you have any suggestions let me know!
 
Congrats! Nice buck! He has great mass and hefty cutters. Great, especially for a first buck. Hunting pronghorn is the closest thing to hunting African plains game that I know of.

I find it to be pretty darn good if there's nothing else to eat.

Kidding. I actually really like the meat. For me though, it's imperative to get a pronghorn field dressed, skinned, and cooled asap. The fastest and farthest you can remove that "fragrant" hide from the meat, the better it tastes. It is distinct in it's flavor but, as in any meat, prepared and cooked properly is the main thing.

Nice taxidermy on great bucks. Congratulations. Pronghorn, IMO, are the most fun of any NA animal to hunt.
 
Nice! Where did you go?

I went to Wyoming in 97, 98, and 99. There in the sage brush, they taste very gamey - almost inedible would be a close description. It was good in stew. I understand the antelope in the agricultural areas taste a lot better.
We were in NE New Mexico. My buck was in some rougher country with a lot of mesquite and cholla. Bobby’s was in more traditional open native grassland.

Bobby and I are looking at several options for next year now. This hunt was only 6 hours from home which made it really nice. But we’re hoping to visit with a bunch of different people at DSC in a few weeks. I’ll let you know if we come across anything exciting.

That was our exact thoughts. Both of us being Oklahoma Whitetail, hunters we love anything spot and stalk. I love the Whitetail Deer but I do not enjoy stand hunting. That’s why I love Africa so much (and the awesome amount and diversity of wildlife). This was the next best thing to plains game hunting in Africa.

Both of our bucks dropped on the spot, so we dressed and skinned them within minutes. And the day I got mine it was 101F when we finished caping him, so we had no choice but to get him on ice immediately. There was certainly no continuing to hunt until we had him iced with those temps.
