Going After Indian Bears With An American Client Braver Than A Lion

Thanks again for another excellent look at old India!

Kawshik the term chicken fried comes from the egg and milk batter that was used with bread or cracker crumbs to camo a piece of tough flank or brisket steak that had been pounded with a tenderizing mallet until it was edible. now days a cuber uses steel blades to tenderize and blend several small pieces of meat into one piece known as a cube steak, the only thing chicken about a chicken frie is the egg in the batter. One of my faverite meals by the way, with hash brownswhite sausage grave and cauliflour with cheese sauce.damm I gotta go eat, thank you for your stories ,put me in the front of the line for your first book I am waiting .

@Kawshik Rahman I'll add to what the others have said. I thoroughly enjoy all your writings. When I joined this forum over a month ago it was too gather information about africa, I didn't even know what the word shikar meant and skipped over posts with the word.
After finally reading one of them they are now the first I go to.
Thank you for your continued contributions

I was indeed extremely surprised at the time . I was wondering , while eating it for the first time " This chicken fried steak tastes and looks surprisingly like beef ! " Chicken fried steak has since then become my favorite meal of all time . My favorite version in the United States of America is served in a Texas Roadhouse named " Sodolak's Country Inn " . I like my chicken fried steak with butter milk biscuits , mashed potatoes , collard greens and cream gravy . However , my favorite American food more than anything else is the cheese burgers from White Castle. I could eat twenty of them when l was younger , in one sitting . Now , l can only eat six in one sitting .
Thank you so much for your kind words and support .

Thank you so much for your kind words and support. I am glad that you enjoy the stories of this old man of days long gone.

I grew up in Texas eating chicken fried steak. Texas road houses (truck stops) usually make the best at great prices. When my parents were still alive, I’d make the 1000 mile trip each direction 4-5 times a year to visit them. My GSP in the passenger seat beside me. I’d stop going and coming to feast on a chicken fried steak. Being a smaller guy (only 155 lbs) I could never finish the meal, so I’d share it with my old GSP. He loved it as much as me.

I really have enjoyed living the ‘60s in India vicariously through you and Poton. You have been a very enjoyable writer on AH! I believe you starting it inspired Poton and IvW to put their lives in writing. Thank you sir for sharing your experiences!

Now we’re waiting...where’s the next exciting episode!:D:ROFLMAO::LOL:;)

Thank you so much for your never ending kind words and support . I will be posting more accounts here as well . However , l am currently tied up organizing Fabliha's wedding ( my niece ) . The boy's family is a traditional Alabama family and yesterday was the first time in my life that l learnt how to wear a string tie !
The last time when l spoke to Poton ( we met yesterday for quail shooting ) , he told me that he will write another account of his , tonight .
I also plan to introduce our friend , Captain Newaz to this beautiful community ( our friend who has secured 81 spotted leopards till now ) . Wait till you hear some of his stories . He makes me look incompetent by comparison .
Chicken fried steak is one of my favorite meals in the entire world . I have tried it at many places. However , whenever l come to the United States of America , my favorite will always be Sodolak's Country Inn in Texas. It is truly to die for !

That is absolutely spot on , Ridge Walker . Kawshik did inspire me to put my reminiscences to paper . Infact , l even copy some of Kawshik's language . My friend is truly a gem of a human being . And while my writing can never match Kawshik's , l am writing another article tonight about following wounded game. I hope that it proves acceptable .

How thick is this chicken fried steak?
We have Schnitzel in Australia. Maybe 1/4” to 3/8” thick at most a bit of tenderised beef or veal coated with egg to bind the breadcrumb.
We also have chicken schnitzel being breast or thing played out Tom get correct thickness and tenderness. Thigh being slightly more moist. Maybe shallow fried at home or deep fried from commercial kitchen like hotels truck stops etc.
I think Schnitzel is a German word.

You’re exactly right at about 3/8” after pounding it down from 3/4” or maybe 1”. Do you put a gravy (white or brown) over the schnitzel? We do on the chicken fried steak. My wife also makes chicken breasts this way...mmmm...delicious! I have to work out harder to burn all this fried stuff off though:ROFLMAO::rolleyes:!

I like a Brown gravy, Plain Gravy. Aussie s do a white sauce Called White Sauce. That is made by melting butter adding flour to make a roux and getting it to the desired consistency by adding milk. It would be seasoned with salt pepper and maybe something extra.
White sauce is good on corned beef and Cauliflower or Broccolli,
There are other gravies, Pepper, Diane, Brown Onion these are just extensions of Brown Gravy. I’ve seen your cooking shows where they make biscuit that they serve with stews .

I absolutely love Weiner Schnitzel ! However , l ate it in Austria and not Australia . It came with potato salad . My favorite chef on television is Alton Brown . In Australia , my favorite restaurant when l visited , was the " Out-back " steakhouse .

Kawshik, you are quite a word smith and like you I love a good chicken fried steak! Let me relate how I found the most scrumptious that has been my pleasure to enjoy.
My best friend and I went on our first elk hunt in 1989. We were only going this one time for the experience but, because I killed a very nice elk and he killed an extraordinary Mule Deer we continued to go every year for 10 years. From our homes to the Flattops of Colorado was a 30 hour drive.
Fast foward 2 years to 1991 and we're heading to Colorado but, just past Longview, Texas the Blazer started to make a knocking noise. After stopping and checking the engine oil and finding nothing amiss, we made our way back to Longview to the Chevrolet dealer. Upon checking the manager told us the main bearing was gone and it would be 2 days before they could get a new block and repair. This ment we were going to miss 2 days of a 5 day hunt.
Our wives came to the rescue by bringing my truck and caddying the broken Blazer home. While we were stranded we walked a few hundred yards to a restaurant called The Butcher Shoppe for lunch....and you guessed correctly....we dined on chicken fried steak. The most delicious either of us had ever had and when our wives got there about 5 hours later, we related to them and they wanted to try it out. So we had 2 huge chicken fried steaks in one day!
We try to arrange eating there on all our trips if we are headed west but, after all these years I can only eat half because it is so big and my wife and I share one. So, if you are ever in Longview, Texas, I highly recommend The Butcher Shoppe. I haven't had one since October, 3 months ago.
Looking forward to your book!

That is quite a fitting way for a Shikari to get introduced to chicken fried steak ! My favorite chicken fried steak in the United States of America comes from a small diner in Texas , named " Sodolak's Country Inn " . When l visit your fine country again six months later , it will be the first place l go to , for chicken fried steak . Is Butcher Shoppe still operating ?

Indeed it is. We ate there last October and look forward to later this year if everything works out.

That is a fun story. Thanks for posting.

I'll try to post my grizzly bear stories since you were interested. But from what I've read your Indian bears might actually be more likely to attack then most grizzly bears.

Hi Jay,

Hope you're well.

I'm headed your way in January.

Attending SHOT Show has been a long time bucket list item for me.

Finally made it happen and I'm headed to Vegas.

I know you're some distance from Vegas - but would be keen to catch up if it works out.

Have a good one.

Mark
