Wild game meal tonight

Axis backstrap, grilled in piping hot cast iron skillet with garlic butter, salt, pepper, fresh cracked black pepper, with acorn squash. Axis has no peer IMO.

Last night’s jalapeño and cheese deer sausage, cream cheese stuffed sandhill crane wrapped in bacon grilled to perfect medium rare.
Butterflied and seared before stuffing ( my wife doesn’t like blood getting into the stuffing)

may I suggest Intaba Safaris in the East Cape by Port Elizabeth, Eugene is a great guy, 2 of us will be there April 6th to April 14th. he does cull hunts(that's what I am doing) and if you go to his web site he is and offering daily fees of 200.00 and good cull prices. Thanks Jim
