As said a lot comes down to your budget. I always go into the room I'm going to place them after my hunt and then I'll have my true head count. Sure going into a hunt I'm pretty damn sure if I'm doing a shoulder mount or a pedestal mount. But on multiple species hunts you'll need to see how successful you were and then sort out placement. As far as color goes that's strictly a personal choice.
