Your right Scott, honesty is the best policy. At least most of the time, being married for 44 years has taught me that it isn't always your best option though.

Here's the little guy that caused all the ruckus yesterday. Sorry I tried to turn the pic right side up, but it keeps loading sideways. A little help please. Leaving shortly to pick up 25 lbs of pepper and onion sausage that a butcher friend of mine made up for me using bear meat. We'll see what that stirs up tonight. And then next week I pick up the peppered bologna sticks. The excitement is sure to continue.

I have! He does some great work. I have a very good- third generation- taxidermist/trophy hunter who I happen to live close to that I'd bet Dennis knows personally who did my rug from last year's bear. However, if circumstances are ever such that a bear needs to be full body mounted Dennis will likely get that call.
 
I shot a black bear in Idaho back in the mid 70's, we ate it and it was great.
 
I would prefer to know upfront what you are serving.
It's only a couple of years ago I found people eat bear. Specifically Black bear.
I'm not sure I would be into it but trying it as sausage maybe, sausage is probably a mixture of meat trimmings anyway.
I would like to Hunt a bear.
 
My wife has been telling me for months ( ever since I booked a black bear hunt with my kids) that she will not eat bear meat. I can't understand why, she has at least tasted everything else that I dragged home. Well tonight I am going to find out just how serious she is. I just put a bear roast into the Dutch oven, I pan seared it first with a little salt and pepper then added some beef broth, onion, carrots and potatoes. Crossing my fingers and hoping for the best, but I will probably be eating bear roast all week. Alone!

I've been told bear is an acquired taste. Some like it some hate it but I would try it once to form an opinion.

Mine was an old boar, 425 pounds, everyone really liked the flavor of the roast and steak but no matter how long I marinated it or how slow or long I cooked it, you needed a chain saw to eat it. But it sure made a big pile of great sausage after that.

I shot a 200 pound black bear this past fall in a friend’s oat field. My Dad had never seen a skinned out bear before and came to my place to watch me process it. After we were done I threw some steaks on the grill and he was amazed at how tender and tasty it was. He ended up taking half the meat home with him!

Years ago I shot two black bears. The liver was better than calves liver but I thought the meat left something to be desired.
 
This brings back a memory. Years ago, my parents, my daughters and I went out for Mom and Dad's anniversary. It was a nicer restaurant than I usually took the girls to. My youngest was 4 at the time a generally ordered nothing but chicken nuggets. In an effort to get her to try something else, I reminded her how much she loved steak at home. As I was reading her the various steaks on the menu, she eventually looked disappointed and in a very loud voice asked " can't I just get a bear steak around here!?" I was way too proud to be embarrassed by the looks and laughter from the other patrons.
 
Fun thread. But to be honest when I saw the title I assumed someone had spent more on a double rifle than the wife would approve of....

So far all the black bears and one grizzly I've tried have been good. I'd say it's got the texture of pork with a flavor that is halfway between pork and venison.

Wipartimer love the 4 year old story. I have a friend in north Alberta who refers to grouse as "chicken." Then one day his wife got a bulk deal on "real " chicken. The kids were very disappointed. After that they would ask "Is this bought chicken or shot chicken?:

Invite neighbors and friends for BBQ, first day, and bear will be done in an afternoon, problem solved.

HI all, here is a Short update on our America trip, I currently in Houston and have 2 more meetings here before movings North toward Oklahoma, Missouri and Iowa, and from there I will head to Colorado and Idaho,I have been met with great hospitality and friendship, and have met several new and old clients and we are going to book the rest of 2025 season quick and have several dates booked for 2026!
That's a wrap, on our first hunt of this years season.

Hunting conditions are a bit tougher in South Africa during the month of February, but can be just as rewarding if done right.
