I'm removing a Douglas Fir stump and in the process found three of these things buried deep in the root mass. they were between 1 and 2 inches long. What is it?

Looks like borer grubs. They typically are found in dying or dead trees/lumber and arent much an issue.

Might try it fried in olive oil?

Biggest grubs I have ever seen were Rhinoceros Beetle larvae in a old tree stump on our place in Virginia. It would have only taken two or three to make a meal. The adults were incredibly impressive as well.

But I would bet yours is a borer.

I would tell my wife it was a rattlesnake tail. No more splitting wood for me!!!
like others have said, a wood boring grub is most likely.

Looks same as our Huhu Grub grows into Huhu Bug a type of Longhorn Beetle, in Aussie they have Wichetty Grub big on Old Days Aboriginal menu !

Ours are Ok to eat raw depends on what type of wood as to flavour & fried in oil/butter is more civilized lol !

+1 with @Hogpatrol I believe seen both the grubs and the beetle in Montana. I’ve also been told that the beetle can give a good pinch, so they aren’t to be played with. Having taken that advice as true, I can’t verify if they are mean.
