Here's my ammo lineup, which gaps do you see?

I see a 12, but that is a pretty deficient gamebird list.

However, you could get rid of half the rifle calibers and still have every situation well covered.
I shoot grouse with my .22 and Turkey with my 12g. Not much of a bird hunter although that may change next year if they open up the Sandhill Crane season like they've been talking about. "Rib-eye of the sky".

So some possibilities I'm seeing..

1. 22 LR
A Hot 22 - 22 Creedmoor? 22-250?
2. 223/ 5.56
A Quarter Bore - 257? 25-06?
3. 9mm
4. 38 spl/ 357 Mag
An Intermediate Lever action cartridge between 357 and 45-70. 44? 35 Rem? 30-30?
5. 7.62X39
6. 6.5X55
7. 6.8 Western
A true 7MM - 7X57? 7X64?
8. 308 / 7.62 x 51
9. 30-06
10. 338 WinMag
Another Mid Bore - 35 Whelen? 358 Norma Mag?
11. 375HH
12. 416 Rigby
13. 45-70
14 .458 WinMag
15. 470 NE
A true 500 Big Bore? Even though I just convinced myself I'll never need to go above 470..
16. 12g

You said interesting calibers….

.220Swift - it’s speed combined with modern bullets make it punch above its weight class.

I would have said .257wby but you have that range covered; however the .220Swift can go from varmint hunting to medium game by switching projectiles.

The quarter bores are something I know very little about. Do you use them for deer sized game? Varmints?

Right now my 22lr is my small game cartridge, 223 and 6.5x55 for coyotes and any big game I'm grabbing the 6.8 or larger.
You're underselling your Swede. Swedes and Norwegians have killed a crap ton of moose, caribou, and red deer with them in the last century. Certainly not a long range load for any of those, but with 155-160 gr pills, 6.5 punches well above it's class so long as you keep the distances under 200 or so yards.

Unfortunately, there are no 160s for sale in the US (until Woodleigh starts exporting again) but Norma Oryx 156 and Lapua Mega 155 are both good bullets.

I used the 160 gr Woodleighs to great effect on a recent safari, but if I didn't have those, would have happily gone with Norma or Lapua

I made it a goal to lower my number of calibers and purposely whittled down my number of calibers because I felt like it was better to have less calibers and higher quantity of ammo that fit more guns on hand.

That being said, of course you should add more calibers :)

17HMR
300 Blackout
45ACP (although maybe you aren't allowed new pistols in canada?)
20GA

I’ve taken mine moose hunting with those 156gr pills. Never got to connect on an animal but I have no doubt it would do the trick, great sectional density.

I think Woodleigh will be getting close to producing some 7mm varieties if they are not already.
I asked maybe 2 months ago and they did say they were getting close.
As for export I don’t know but I hope to secure some

First thing would be "do you reload" followed by "do you cast" as that opens up a myriad of possibilities. 17 tiny mite (Americans call it the hmr , the identical Australian version predates it by 20-25 years) 22H.P., 250 Myra, 25 nickel, 25-35, 32-35, 32-40,38-55,32win, 280ross/nitro/halger ,
Etc, etc, I could go on for ages
Gumpy

Prohibited here in Canada, unfortunately.
if not 50bmg, then go with chey tac calibers, 408, 375.... if extreme long range is a wish.

22?
If want to stay in rim fire realm, 21 sharp... it is 22 of modern age.

7 mm?
270 win, 280 rem, 7x64, or 7 rem mag.

mid bore?
9.3x62 or 9.3x64.

DG
if you want to be the man: 700 NE

But your initial inventory leaves nothing to be desired.

If intention is 360 degree caliber collection only, fine.

Everyone always thinks about the worst thing that can happen, maybe ask yourself what's the best outcome that could happen?

Do you have any cull hunts available? 7 days, daily rate plus per animal price?
