Congratulations! I am sure you're about to embark on the adventure of a lifetime.

First, I'd listen to my PH, if you see an exceptional trophy you may want to take it even if it is not one of your intended targets. Second, I would study the trophy fees, and decide how best to distribute the money. In my experience plains game is generally split up into tiers in South Africa:
1. Animals less than $1000 - impala, common springbuck, warthogs. etc.
2. Animals between $1000-$2000 - Gemsbok, Wildebeest, Red Hartebeest, Zebra etc.
3. Animals over $2500 Kudu, Eland, Waterbuck, Nyala etc.
With the budget you mentioned I would give some serious consideration to a Gemsbok and a hartebeest. They both make great trophies, and I'll bet you can hunt them both for less than $2500.
Finally, these trips are expensive, that's all there is to it. Everyone has different means, and that is ok. But you've flown all the way there, and already spent a small fortune. Don't let a couple grand stop you from taking an extra animal or two if you have the time...Shoot the impala it's only an extra $500.
