Wish I’d had some kudu meat!

Picked up some pork butt yesterday, and ground and seasoned it today. Put it about a pound to a

bag. Looking forward to breakfast in the morning. Some kudu meat mixed in would have been perfect!

Had kudu sausage last year in June on a hunt with KMG in the Eastern Cape. Some of the best sausage I’ve ever eaten!

I like the thinking but if you were lucky enough to have kudu meat it the USA would you really mix it with pork? My first thought was I wish I had eland meat, but think it would be a crime to mix it with pork.

It would be a crime to make sausages of Eland meat period That's like grinding Wagyu beef.

Kudu and eland are both very good - but my favorite is gemsbok, then wagyu

Agreed, and you can consider Axis venison in the same regard.
