Dr Ray,that should be the Base line for all Meats, we here coat our Game Meat with Vodka and then Salt it and freeze at least for 48 Hours and then Cook.Still to have a problem with it,using the same process since 1971.Best

I like the Tillie in my picture. They are supposed to fit loose (2 fingers inside hat band), have mesh for cooling, and hold their shape after washing.
